Enlightened Reading: Get Inspired by Meredith Baird’s Coconut Kitchen

February 17, 2016

A cookbook titled Coconut Kitchen by Meredith Baird rests on a wooden table next to a woven textile. The book cover features a coconut ring and gold lettering.

Yesterday I shared a delicious Coconut Yogurt Bowl recipe centered around the well-rounded fruit-nut hybrid, and today I want to turn attention to the book where I found it, Coconut Kitchen: Cooking With Nature’s Most Beautifying SuperfoodIt was written by raw food chef Meredith Baird, a South Carolina native who now calls Venice home—more with her tomorrow!

Meredith’s healthy recipes illustrate her innate creativity. Along with beautiful food photography, she shares knowledge and insight on the coconut and its place in the center of the superfood movement. Meredith praises it as the ultimate beautifying food, both inside and out. She incorporates it into dishes like vegan coconut caesar salad and coconut ceviche, and also reveals ways to use it on the skin for a glowing complexion.

Perhaps the best thing about Meredith’s book is its simplicity—her message is clear and her recipes are easy to follow, requiring no formal skills or training. It’s the ultimate tribute to a simple food that is versatile, powerful and transformative. XXJKE
